Last December 2008, i sent an email to Masigasig magazine of Globe Business and hoping to be chosen as their letter of the month. The content of my email was about our family business which is the “tableya”. Here is my email using my bohol.asia account:

I know about your magazine here in auza.net office here in Bohol and i read your last November issue. My Family has a home-based tablea manufacturing business here in Bohol. We supplied tableas or chocolates in supermarkets only here in Bohol. Can you help us distribute our products there in Cebu or Manila? We’ve got many orders there in Manila such as chocolate companies but we have some problems in the courier. We would like to ask for suggestions and advices for the progress of our business. since we are new in the business world. This business is already registered by DTI and BFAD. Last June, 2009, somebody was calling me in the phone inquiring about our products, she is from manila. I asked her where did she got my contact number and she said that she read about our business in the masigasig magazine of globe. I was shocked when she told me that coz im not expecting that my email last december was already published. That’s why i went to globe office after that call to get one of the june issue magazine, and that is really true, my email was published in the the LETTER OF THE MONTH corner of magasig magazine. A week after that, the staff of the masigasig magazine called me, she confirmed that my letter was published. She asked me my complete address and my complete name so that they can send me the package price. I’m really excited to receive that price! hehehe Later in July, when i went home, my mother told me that the package just arrived and that it what i’m waiting for…heheh yehey! I excitedly opened the package of the LBC and i saw the back-up - bag for a laptop, unfortunately i have no laptop to put..hehehhe but that’s okey. I also received a kit containing USB Hub, a very cute mouse, headphone and other gadgets and also globe sim.

Masigasig magazine brings a big impact in the progress of our tablea products, until now we’ve got may inquiries, emails and calls. We also got many additional orders all over the Philippines.

This is a Blessing from the Almighty..we are very thankful for this!

Cacao (Theobroma cacao), or the cocoa plant, is a small (4–8 m or 15–26 ft tall) evergreen tree in the family Sterculiaceae (alternatively Malvaceae), native to the deep tropical region of the Americas. There are two prominent competing hypotheses about the origins of the original wild Theobroma cacao tree. One group of proponents believe wild examples were originally distributed from southeastern Mexico to the Amazon basin, with domestication taking place both in the Lacandon area of Mesoamerica and in lowland South America. Recent studies of Theobroma cacao genetics seem to show that the plant originated in the Amazon and was distributed by humans throughout Central America and Mesoamerica. Its seeds are used to make cocoa and chocolate.
The tree is today found growing wild in the low foothills of the Andes at elevations of around 200–400 m (650-1300 ft) in the Amazon and Orinoco river basins. It requires a humid climate with regular rainfall and good soil. It is an understory tree, growing best with some overhead shade. The leaves are alternate, entire, unlobed, 10–40 cm (4-16 in) long and 5–20 cm (2-8 in) broad.

Cacao flowers
The flowers are produced in clusters directly on the trunk and older branches; they are small, 1–2 cm (1/2-1 in) diameter, with pink calyx. While many of the world's flowers are pollinated by bees (Hymenoptera) or butterflies/moths (Lepidoptera), cacao flowers are pollinated by tiny flies, midges in the order Diptera. The fruit, called a cacao pod, is ovoid, 15–30 cm (6-12 in) long and 8–10 cm (3-4 in) wide, ripening yellow to orange, and weighs about 500 g (1 lb) when ripe. The pod contains 20 to 60 seeds, usually called "beans", embedded in a white pulp. Each seed contains a significant amount of fat (40–50% as cocoa butter). Their most noted active constituent is theobromine, a compound similar to caffeine.
The scientific name Theobroma means "food of the gods". The word cacao itself derives from the Nahuatl (Aztec language) word cacahuatl, learned at the time of the conquest when it was first encountered by the Spanish. Similar words for the plant and its by-products are attested in a number of other indigenous Mesoamerican languages.

Tablea o Tableya

Tableya or Tablea is an unsweetened chocolate rounds made from cacao or cocoa beans. It is an ingredient in the Filipino delicacies especially for Boholano’s sikwate and champorado.

‘Sikwate’ is a hot chocolate drink paired with puto maya, pandesal and others while ‘champorado’ is sweetened rice oatmeal cooked with tableya.

We are one of the tableya makers here in Bohol for 15 years. We are one of the suppliers of Tableya in supermarkets and Malls here in Tagbilaran City, Bohol.

We get our cacao beans from Davao, pure tableya is made only from cacao beans. You can also determine if that tableya is really Pure when you hold it tightly or expose it to the heat of the sun, it will really melt and look likes a real chocolate. When you look it you can really say that it is a real sweet chocolate because of its shape and color but when you taste it is not..

How to make a Pure Tableya?

1.The cacao beans are roasted over wooden fire.
2.After, the beans go on a grinding machine and ground at least two to three times for a smooth liquid consistency.
3.The resulting substance was set aside to cool before they were molded into rounds shapes.
4.Let it dry and pack it with cellophane or with a good packaging.

How to cook sekwati?

1.For ‘Sekwati’: For every cup of boiling water, add three pieces of round tableya.
2.Boil it for two to three minutes. Stir.
3.Remove it from the stove.
4.Add sugar
5.If you desire, you can add milk to make it creamier. Serve hot.

How to cook champorado?

1.Boil 3 to 4 cups of water with cooked rice for 2-3 minutes.
2.When it is already boiling, add 4-5 tablets of Tableya. Stir until the tableya melts.
3.Remove it from the stove.
4.Add sugar
5.If you desire, you can add milk to make it creamier. Serve hot.

We’ve got many orders already of our tableas inside and outside our country. They paid for the shipment and deposit their payment through our bank account. Many of those are from Manila.

The production is daily; we can produce a lot of packs of tableas every week for 100kilos of cacao beans weekly.

Calamay

Calamay is a sweet concoction of ground sticky rice, sugar, coconut milk, vanilla and some peanuts (optional). It is sold in smooth coconut shells that are sealed shut by a characteristic band of red tape.

If it is refrigerated for a few days, you can slice off a sliver and eat it like you would cheese… I have never seen the stuff made but I understand the ground rice flour is added to near boiling coconut milk and sugar and stirred until it reaches the desired consistency. Vanilla is added to enhance the flavor and chopped peanuts if that grabs you.

When you came here in Bohol, You can really see vendors of Calamay in ports here. Calamay is our best for pasalubong here. If a person went here in Bohol, they always want calamay as their Pasalubong! Yah, as a boholano, I'm really proud to say that our products here is great esp. our home made products and pasalubong!

How sweet can you get "chocolate"?

Tableya, the home-made tsokolate of Filipinos, great for hot choco drinks and for champorado. I've bet as a Filipino, you have drink it before right, use to served by your mother or lola especially in the province. You can really find this product here in province of Bohol. It is made from cacao seeds. It is called 'sekwate' when it is already made a hot choco. It is really delicious and great that you will really miss to drink here in our province. We are one of the suppliers of Tableya here in supermarkets here in Bohol. We got many orders from Manila and other places because of of our customers said that it is really great and and besides this is very expensive there in Manila. Here, you can buy 1 pack in your 12 pesos. Champorado is also made from tableya.The name of our tableya is "Dalareich Tableya". You can buy this in supermarkets here in Tagbilaran City.
